This clean eating peppermint fudge is sure to become a favorite. With cacao powder and maple syrup, this recipe has no refined sugar and tastes delicious!

Get ready for this clean eating peppermint Fudge recipe!! This is a holiday treat around here, but in all honesty, there is no reason why you can’t eat it year round. It’s great for Halloween, Christmas and Valentines day too. In fact, I think chocolate fudge is ALWAYS a good idea!

If you have been following my blog, you know that we are avoiding dairy. For most of the year, it isn’t an issue, but it becomes really difficult around Valentine’s day. The kids start to have class parties and they exchange candy with their classmates. I let them participate in the class activities but I like to send them with a treat that I know they will be able to eat. These fudge bars are perfect. Even kids who are not dairy free will enjoy them.

Because there is no refined sugar, this is also clean eating compliant.

Ingredients

Bottom Layer

  • 1/4 cup coconut oil, measured solid
  • 1/2 cup almond butter
  • 1/4 cup + 2 tablespoons maple syrup
  • 1/4 cup + 1 tablespoon raw cacao powder

Top Layer

  • 1/2 cup cashew butter
  • 2 tablespoons coconut oil, measured solid
  • 1 tablespoon maple syrup
  • 3/4 teaspoon mint extract
  • 60 drops green food coloring – You can use a natural food coloring, or just skip the color all together
  • 2 tablespoons mini chocolate chips (dairy free)

Directions

Make the bottom layer. In a small pan heat the coconut oil, almond butter and syrup over low to medium heat.

When the oil is melted turn off the heat and mix until combined.

Leaving it on the warm burner, whisk in the cacao powder until combined.

Line an 8×4 pan with parchment paper and pour the fudge into the pan- make sure it’s even. Place it in the freezer to set for 30-60 minutes.

For the top layer, melt the cashew butter and coconut oil over low heat. Once oil is melted remove from heat or the cashew butter will burn. Whisk together until smooth. Add in the remaining ingredients )not the chocolate chips) and whisk until completely combined and green.

Let sit on off the burner for 3-4 minutes.

Remove the bottom layer from the freezer and pour the green fudge on top. Smooth until even and top with chocolate chips.

Return the pan to the freezer to set. When ready, remove from the freezer, let sit briefly and cut int squares.

  1. This looks so yummy! I normally make fudge for Christmas, but didn’t this year. I kinda felt like I needed to make it with cleaner ingredients if I was going to make it and just didn’t have the time to research. I will definitely need to file this one for the next time I want to make fudge!!!
