  • Preheat oven to 400 degrees F. Spray a 9 x 13 inch pan, with nonstick cooking spray.
  • Peel all the potatoes, with a potato peeler, then slice them into thin rounds. These should be less than 1/4 inch wide.
  • In a small bowl, combine the melted butter, brown sugar, honey, and olive oil. Mix until fully incorporated.
  • Lay out your potato slices on the bottom of the pan. Make sure you only do one layer of the sweet potatoes.

FAQs

Why do you soak sweet potatoes before baking? ›

The theory is that soaking draws out starch from inside the potatoes, helping them crisp up. I've tested soaking sweet potato fries many times, and I've found that it doesn't make them much crispier, if at all.

Should you poke holes in sweet potatoes before baking? ›

Before baking, use a fork to prick each sweet potato several times. You don't need to jab the fork in deep. We're creating steam vents. Otherwise the pressure in the sweet potato could build up so high in the oven that it explodes—an unlikely possibility but one best avoided!

What tastes better boiled or baked sweet potatoes? ›

Why You Should Bake Sweet Potatoes Instead. While boiling makes sweet potatoes tender, it doesn't help much with their flavor. Most dishes that call for boiled sweet potatoes would be improved if you used roasted or baked sweet potatoes.

Why won't my sweet potato bake? ›

Baking Sweet Potatoes Without Poking Holes in the Skin

The pressure inside a sweet (or regular) potato can build up in a hot oven. Pricking small holes in the skin with a fork is an easy way to let that steam escape, avoiding a sweet potato disaster.

Is it better to wrap sweet potatoes in foil when baking? ›

Wrapping the sweet potatoes in foil ensures that they don't dry out too quickly, and allows you to add aromatics if desired.

Is it better to peel sweet potatoes before or after boiling? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

What temperature is a baked sweet potato done at? ›

If you'd like a more precise indicator, insert an instant-read thermometer into the thickest part of the sweet potato. The internal temperature of a cooked sweet potato should read between 205- and 212-degrees Fahrenheit.

Can you overcook sweet potatoes? ›

(Another hot tip if you're boiling your sweet potatoes: Don't overcook them! They tend to absorb water, which could make the filling watery.) So, say you do have some undercooked bits of sweet potato. You have two choices: Pick them out or bake your sweet potato casserole long enough to soften the underdone pieces.

Should you wrap a potato in foil when baking? ›

NEVER BAKE POTATOES IN FOIL.

Foil wraps will not decrease baking time, but will result in a soggy potato interior with wet skin. Wrapping a baked potato in foil after it has been baked will allow you to hold up to 45 minutes, but the best method for holding a baked potato is in a bread warming drawer.

Why add eggs to sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

What is the tastiest sweet potato? ›

The most versatile and sweetest variation of sweet potatoes is the Beauregard. Throughout the United States, you will see this species stacked high in the grocery stores during the holiday season. Beauregard's have a bit of a stringy texture, but they stay soft: this is what makes them so popular.

When not to eat sweet potatoes? ›

How to tell if sweet potatoes have gone bad. If your sweet potato is soft in spots, smells rotten, or oozes a mysterious liquid, that potato should be discarded. Another sign that sweet potatoes have taken a turn for the worse is if they start growing stalky purplish sprouts.

How to tell when sweet potatoes are done baking? ›

Use a fork to poke holes into the sweet potatoes, set them on the baking sheet, and roast for 40 to 50 minutes, or until puffed up and soft inside when pierced with a fork.

Why are my baked sweet potatoes still hard in the middle? ›

If your baked sweet potato feels tender, it is likely ready. If it still feels firm, I'd put it back in the oven for another 15 minutes. Expert tip!

Should I put sweet potatoes in water before baking? ›

Give them a cold water bath: Once your fries are chopped, toss them into a large bowl. Then cover the fries completely with cold water and let them soak for at least 30 minutes (or up to overnight). This will help to rinse off the excess starch and help the potatoes crisp up beautifully in the oven.

Should you soak potatoes in salt or sugar water? ›

Why use salt water for soaking potatoes? There's moisture naturally found in potatoes, and moisture is drawn to higher concentrations of salt. (This is a process called osmosis.) So, if you put the potatoes in a salt water bath, that will help draw out some of their moisture, resulting in crispier fries.

How do you soak sweet potatoes to remove starch? ›

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.

Why do you need to soak potatoes before baking? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.
