APPLE SNACK SQUARES

The whole month of August my husband has been staying at a hotel. Not for what you think – all things are good in the Denney household.

He’s been at football training camp for the Dolphins away from home. I don’t usually announce what he’s doing but now that he’s home and the bad guys can’t get me, I feel comfortable telling you.

Without fail, every time he leaves – sometimes the same day, the whole house falls apart. Murphy’s Law I guess. This year the A/C went out (the hottest time of the year in Florida), the sink broke (try cooking like I do without water in your kitchen), and the ice dispenser stopped working (hello warm protein shakes). That was all in the same week.

My husband and I have traditional roles in our marriage. He handles the lawn, car, and broken stuff. I do the cleaning, cooking, and laundry.

Just because that’s how it naturally happened not because we are assigning each other tasks. Ya’ll, I can fix a sink but it will take me DAYS and a lot of Diet Dr. Pepperto do it.

I actually fixed the sink – and the A/C, but it mentally and physically took it’s toll. Kids, eat croutons for dinner and wear what you wore yesterday.

So I’ve been doing some baking therapy. Currently I have these on my counter and an entire Chocolate Coconut Sheet Cake (coming soon). It really relaxes me and I’m so glad to have him home. Hallelujah.

They’re not too sweet but their texture is what won me over. Crackly top with a chewy, soft middle. Makes the whole house smell like fall.

The dough is thick so you want to use your hands to press it down evenly into the pan.

Bake these Apple Snack Squares for 35-40 minutes at 350. You can cover it with a foil tent if it starts to get too brown.

Servings: 16 squares

Ingredients

  • 2 cups sugar
  • 2 eggs
  • 3/4 cup canola oil
  • 2-1/2 cups self-rising flour, (see Note for substitute)
  • 2 teaspoons ground cinnamon
  • 3 cups diced peeled tart apples
  • 1 cup chopped walnuts
  • 3/4 cup butterscotch chips

Instructions

  • Preheat oven to 350° and spray a 9x13 baking dish with cooking spray. In a large bowl, combine sugar, eggs and oil. Stir in flour and cinnamon (batter will be thick). Stir in apples and nuts. Spread into prepared pan and sprinkle with butterscotch chips.

  • Bake at 350° for 35-40 minutes or until golden and a toothpick inserted near the center comes out clean. Cool before cutting.

Notes

As a substitute for EACH cup of self-rising flour, place 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup. (So for this recipe you would need 3-3/4 teaspoons baking powder and 1-1/4 teaspoons salt for the 2 1/2 cups flour.)

    These were great. I added a little bit of unsweetened applesauce, used 1 1/2 cups sugar, and 1/2 cup brown sugar, and since I didn’t have enough butterscotch chips, I added a mixture of butterscotch and salted caramel chips. The kids love ’em!
